Apple and sultana cake
Ingredients
225g (8oz) self raising flour
2.5ml (1/2 level tsp) cinnamon
100g (4oz) butter or margerine
100g (4oz) soft brown sugar
2 eggs, beaten
50g (2oz) sultanas (or raisins)
2 cooking apples, stewed and pulped
Heat the oven to 170C /150C fan (325F) Gas mark 3 Grease and line a loaf tin 23 x 12.5cm (9" x 5") Sift together flour and cinnamon. Cream together the fat and sugar until light and fluffy. Gradually add the beaten eggs. Fold in the half sifted flour. Add the sultanas and apple pulp and the remaining flour and fold in. Turn the mixture into the prepared tin and bake just below the centre of the oven for about 1 hour 30mins. Turn out, cool and serve cut in slices and butter if desired.
